Having had to do this in the past, I would recommend a two stage process.
1) Set up SpamAssassin with a good ruleset for your organization (whitelist critical emails, etc). -- Configure SpamAssassin to NOT delete mails, just add "**SPAM**" to them 2) Set up your PostmasterFilter to filter things containing "**SPAM**" in the subject.
This way you spend far less time messing with PostmasterFilter which, as was pointed out, is not really a spam filter and will drive you crazy trying to maintain it as such.
