Hello Allan,
You can do that into General Catalog, There are the definition for all your classes including the Config Item Class.
The process on how to do that is a bit complicated, but basically, you need to create the class there and then in Config Item you can create the definition for that newly created class.

"Admin::SysConfig", I have clicked on everything I can see that might
have anything to do with "ConfigItem" but am unable to find where to
add/edit/define classes.
Where do I need to click, exactly, to edit the classes?
