That is bad because these files will be overwritten if you update OTRS 
in future. _Do_never_change_other_config_files_than_Kernel/Config.pm!!! 

The right solution is to copy the config param

    $Self->{'AdminEmail'} = 'admin@example.com';

to your Kernel/Config.pm file and change it to your needs.
