Yes it can access via IMAP and yes it will delete them, no there is no option to prevent it from doing this.

This has been asked a number of times on the list, if you need to keep a copy of the emails somewhere else you will need to use a separate mailbox for that purpose and have the incoming email delivered to both the "archive" mailbox and the mailbox OTRS is collecting from.
