That's no problem, you can use two "properties" as default. You can defined the key and the value of your properties (e. g. Incident Type and Product).
And of course you can search/filter for them (Utilities).

Ok, it's a little bit hidden! .-) There is only one way to fill the ticket free text at the moment (1.0). It's done by email x-headers like: X-OTRS-TicketKey1: Product X-OTRS-TicketValue1: apples -=> This will be shown in the QueueView and TicketZoom. And you can search for them in Utilities. I put the better integration of "ticket free text" in the web frontend to the todo list of 1.1.
