You can do this via "SysConfig" in the administration interface Search for or browse to Frontend::Agent::Ticket::ViewCompose there you woll find the item "Ticket::DefaultNextComposeType" where you can set the status

How can the pending date be set by default to 10 days or more ? I think this can be done via the queue setting
I did not read any thing about that in queue setting. I found only "Unlock timeout" and "Escalation time" settings. Regards.
