I've tried with one of states listed in
Ticket::Frontend::AgentTicketCompose###StateType (copy and paste)
I've tried with one state added manually .....
But Ticket::Frontend::AgentTicketCompose###StateDefault it's always "open"
I am in french and states in
Ticket::Frontend::AgentTicketCompose###StateType are : open, close,
pending auto and pending reminder (4 states)
When I compose one answer in frontend, 6 possibles states in french are
displayed.

Did you make sure that at Ticket::Frontend::AgentTicketCompose###StateType you have listed the state type associated to your desired default state?
